BABY SPINACH WITH EGGS





A nice and healthy alternate to the usual breakfast!!...tastes great..!

Ingredients
Eggs - 2
Spinach- 3-4 tbsp chopped
Onion- 1 tbsp chopped
Salt
Black Pepper
Cheese

Method
Take a bowl and beat eggs in it. Add in salt and black pepper.

In a pan, heat oil and add the spinach and saute it till its color changes. About 2 minutes.

Add this spinach into the egg mixture. Now add the chopped onions into the pan and saute till translucent.

Now add the egg mixture into the panand fry egg as normal. You can half fry the egg, as I have in the pic since my hubby loves it that way.

Now once you flip the egg once, add grated cheese on the top of egg and start rolling the egg from one side (in case of full fried egg), incase of half fried, just add grared cheese and turn off the flame.

Spread cilantro over the egg and enjoy!!
