OKRA IN COCUNUT MILK
This is for everyone to know, bhindi is my favourite which explains why I have mostly bhindi recipes on my blog :-P
So here's another yummy bhindi recipe which is a must try!
Ingredients-
Bhindi- 1/2 kg (remove the head and the bottom part of it only)
Urad Dal- 3 Tbsp
Potatoes- 1 medium boiled & cubed (This is entirely optional)
Mustard seeds- 1 tsp
Cumin seeds- 1tsp
Curd- 4 tbsp
Coconut milk- 1/2 cup
Turmeric Powder- 1/4 tsp
Red Chilli powder- 1 tsp
Coriander Powder- 1/2 tsp
Salt
Oil
Curry Leaves- 10-12
Onion- 1 medium chopped finely
Tomatoes- 2 pureed or finely chopped
Whole Red Chilli- 3
On the stove-
Firstly, take oil and you can either deep fry or shallow the bhindi's, I shallow fried it, added a pinch of salt and a tsp of curd to it and fried till it was tender. Keep aside.
In a non-stick vessel, heat oil, add cumin seeds, mustard seeds, whole red chillies, curry leaves, urad dal and sauté till the dal becomes goldenish brown and rest of the ingredients start to splutter.
Add the chopped onions and fry till golden, add the pureed or finely chopped tomatoes and simmer till oil separates and floats on the top.
Add the red chilli powder, turmeric powder and the coriander powder, salt and mix well.
Add the Coconut milk into the vessel, simmer for 2 minutes and add the boiled potatoes and the fried bhindi in it. Simmer for 5 minutes.
Turn off the flame and add the curd and cook till oil separates.
Garnish with cream and coriander leaves.
