EGG PIZZA
Since me & The Hubby get bored quickly with the same breakfast everyday, I resorted to making something new from the routine daily stuff.
Ok for this quick breakfast, you can use previous nights left over roti's, the one we get here in the local super markets or get fresh ones or home-made roti 's or even bread would do.
If youre using roti's cut them like pizza slices.
If youre using bread cut each bread into two triangles.

Method-
I've used two medium sized roti's
And two eggs
In a large bowl add in the eggs, whisk them well.
Add in 2 tbsp of gram flour, 1 tsp fennel seeds, grated carrots, finely chopped bell pepper, finely chopped spinach, salt, black pepper, and finally..some grated cheese preferably Mozerella.
Dip the triangular pieces of rotis in this mixture, coat them completely and shallow fry them from both sides..
Once you're done frying, arrange them in a tray like a pizza. And top it up with your favourite grated cheese and olives..! You can add anything to suit your tastebuds.
