Creamy Cajun Chicken & Potatoes


Creamy Cajun Chicken 



First of's..

For the Chick Marinade-

Chicken thighs bone-in, skin-on 8-10 pieces
Cajun Spice- homemade/ store-bought- 3-4tsp
Mixed herbs - 3tsp
Canola Oil (substitute with olive oil if using traditional oven)
Salt
Ground Black Pepper

For the Potatoes-

Red Potatoes or Russet Potatoes 4 medium sized cut in thick wedges
Cajun spice mix- Home made or store-bought
Salt
Ground Black Pepper
Canola Oil(substitute with Olive oil if using traditional oven)
Take a bowl, and mix everything


For the sauce

Onion- 2 tbsp chopped
Chicken broth- Homemade/Store bought/1 Stock cube
Butter for making the sauce -3 tbsp
Cream- 18% or Thick Cream
All purpose flour- 3 tbsp
Salt
Ground black pepper

Other ingredients

Fresh Organic Baby Spinach- washed and strained
Organic Cherry Tomatoes- 7-8, sliced in half lengthwise.
Organic green beans- 100g, blanched.

Pre heat the oven and set the temperature to 350F.
Since potatoes take longer time to bake as compared to the chicken, bake them first..
So in goes the potatoes for about 20 minutes at 350F
(Optional- you can air fry them for 10 mins at the same temp)

Meanwhile, take a pan, add 1 tsp of canola oil and sear the chicken (both sides offcourse!) at medium high heat. Once done, in the left over oil, saute the spinach and keep aside.

While the potatoes are baking, take a cooking vessel, melt butter, add in the chopped onions.
Once they start sweating, add in the all purpose flour and slow roast it along with the onions till the aroma starts to build up..add the cream, chicken broth, salt and pepper. The sauce shouldnt be too thick or too runny.
You can add herbs or a sprinkle some cajun spice mix too, this is completely optional.

Now your potatoes must be baked partially..
Take a deep baking dish, grease with canola oil, add the partially baked potatoes, the seared chicken pieces, sauteed spinach, blanched beans and spread the cherry tomatoes evenly.. (pic2)

Get the oven pre-heated again to 350F
In the end, top it up with the sauce, give the tray a nice little shake-y shake-y for the sauce to settle down in the baking dish, sprinkle parsely  ..and in the oven it goes for good 30-35mins at 350F.

Done.
