ALU POHAY/ FLATTENED RICE WITH POTATOES



This is a very famous Maharashtrian snack, usually made for breakfast, at my moms place its made on Friday morning without fail..its almost like a ritual..! Its so delicious and quick to make and very filling at the same time..

Lets gather the ingredients
Pohay- 200g (washed)
Peanuts- 6-7
Onions- 2 chopped
Green chillies- 3 chopped
Mustard seeds- 1 tsp
Cumin seeds- 1 tsp
Turmeric powder- 1 tsp
Coriander seeds- 1 tsp
Curry leaves- 8-10
Potatoes- 1 cubed (boiled or fried)
Oil
Salt
Sugar

Method

The first thing you need to do is, take a sieve and put poha in it and put it under the tap, let the water run throughout the poha and drain at the same time.

That will leave you with wet poha. Leave it aside and let the water continue to drain.

Heat oil in a pan and fry the peanuts and when they're goldenish, take them off in a plate aside.

In the remaining oil add curry leaves, mustard and cumin seeds. If you want your potatoes fried, add them now and fry till tender, add green chillies, coriander seeds, turmeric powder, salt, sugar, onions and fry for 5 mins till the onions are soft and not brown.

Once that done, add the poha, mix well till they're evenly yellow in color and simmer for 5 minutes.

Sprinkle with fried peanuts, coriander leaves and sev.

Tip- add enough oil to the poha, or else they'll become dry and hard/crispy after cooking which isn't what is desired.
It should be soft and juicy after cooking.
