I'm personally not a great fan of eggplants, but its ok for a change and not to forget Brinjal/Aubergine/Eggplant has a host of benefits like keeping diabetes under control, its very good for heart patients, helps to lose weight, helps produce Iron in the body and on and on...

Sometimes you want to eat certain vegetables considering the amount of benefits it does to our body and so..brinjal for me, is one of them.

So, lets gather what we require

Ingredients
Eggplant- 4 mark 4 cuts lengthwise making sure they are not separated (as seen in the pic)
Onions- 2 finely chopped
Coconut Desiccated- 2 tbsp
Water- 1/2 cup
Oil
Corainder seeds- 1 tbsp crushed
Coriander leaves
Dry red chillies- 3-4
Tamarind paste-3-4 tbsp
Garlic-4-5 cloves
Turmeric- 1 tsp
Brown sugar- 1 tsp
Sesame Seeds- 2 tbsp roasted
Mustard seeds- 1tsp
Green Chillies- 1-2
Salt

On the stove

Heat oil in a pan, add the eggplants and fry well till their colour changes.

Simmer for a while till the eggplants are tender and fully cooked.

In a separate wok,  heat oil and add the chopped onions and coriander leaves and dry red chillies. Fry till onion changes to golden brown colour.

Now take this mixture of onion and put in the mixy wixy, add desiccated coconut, sesame seeds, garlic cloves and a bit of water and grind them well into a fine paste.

Empty this mixture in a bowl and add turmeric powder and tamarind paste.

Add this mixture/sauce into the vessel along with the eggplants, check for salt and add the brown sugar.

For the 'Tarka'

Heat 1 tsp oil and add mustard seeds and slit green chillies, Saute for a bit and add it to the eggplants..
